Lately, I’ve thinking about how I used to order pizza with extra cheese when I was a kid. I wondered what it would be like now. I went to my local quick pizza favorite, Carmine’s on Graham Ave. Coincidentally, several people were getting slices with extra cheese before me.
The guy topped off a huge high pile of shredded mozzarella on my slice and put it in the oven to melt. It came out heavy, creating a pool of grease on my paper plate. Dang, too much cheese for my tastes these days. It like stuffing of ball of mozzarella down my throat. Maybe a regular cheese slice is fine the way it is. They had their proportions right the first time.
