Top 10 Pastry Chefs in America 2011

Oh shit. I had the great privilege to eat all the best desserts made by the “Top 10 Pastry Chefs in America” as determined by Dessert Professional magazine at their awards party. So much sugar. I really don’t know what was going on. I know I almost got my ass kicked by one of the chefs when I stole one of his plastic spoons. Well he did only have six of them, and I waited for him to look the other way when he caught me, and he probably saw that I just threw away my old spoon a few seconds earlier.

My big mistake of the night was trying to eat every single sweet and finish it. I was so high by the end, I came home and took an online improv class. It was taught by Wayne Brady at the Learning Annex.

This was the menu (not in order of photos):

1. Antonio Bachour – Executive Pastry Chef, Quattro at Trump Soho, New York, NY and Solea at W South Beach, Miami
Panna Cotta with Peach Sorbet, Morello Cherry and Peach Pearl, Cherry Gel Sheet and
Cellophane of Sugar

2. Heather Carlucci-Rodriguez – Pastry Chef, PRINT at the Ink Hotel, New York, NY
Chocolate Flan with Chocolate Sorbet and Preserved Black Currants

3. Tariq Hanna – Pastry Chef and Owner, Sucre, New Orleans, LA
Lipstick on a Pig (A P. B. and J. Tale)

4. Sylvain Leroy – Pastry Chef and Technical Advisor, Paris Gourmet, Carlstadt, NJ
Boa Vistas

5. Francisco Migoya – Associate Professor, The Culinary Institute of America, Hyde Park, NY
Black Forest Pop

6. Jerome Landrieu – Pastry Chef and Director, Barry Callebaut Chocolate Academy,
Chicago, IL

7. Yoni Morales – Executive Pastry Chef, Ark Las Vegas Restaurant Corp., Las Vegas, NV
Mojito Cappuccinos

8. Oscar Ortega – Pastry Chef and Owner, Atelier Ortega, Jackson Hole, Wyoming
Passion Fruit Cream with Hazelnut and Lemon Mousse

9. Ron Paprocki – Executive Pastry Chef, Gordon Ramsay at The London, New York, NY
Valrhona Caramel Chocolate Mousse, Chocolate Sable, Milk Jam with Quark Ice Cream

10. Jean-Francois Suteau – Executive Pastry Chef, The Beverly Hills Hotel, Beverly Hills, CA
Caramelia-Strawberry-Cassis

This year’s Hall Of Fame honoree is pioneering educator and pastry industry leader, Jacquy
Pfeiffer, co-founder/owner of the French Pastry School at City Colleges of Chicago in
Chicago, IL.

Pi Day @ Pies-N-Thighs

Celebrated Pi Day (3/14) with members and friends of ScienceBlogs & Serious Eats at the new Pies-N-Thighs. We were supposed to meet up at 4pm, but found out last minute that they close from 4-5pm everyday. So 5pm it is. Luckily it was Daylight Savings (Spring forward), so we sorta did meet at 4pm after-all.

The new Pies-N-Thighs is a much nicer and cleaner version of the old place. Looks small, but there’s extra seating in the back. Everything I tasted was pretty good. The collards are cooked more than I’ve ever had, but still good. I liked the mac n cheese that had hot sauce on it. We ordered a slice of each pie they had. Banana Cream was a crowd favorite. I liked the Boozy Raisin. The Coconut Cream tasted like my lotion, but in a good way. We almost had to start dinner all over, because I forgot to take a photo of my own food (Carolina Pulled Pork Sandwich Box).

Check out ScienceBlogs for the latest on the 2010 Pi Day Bake-off. Plenty of entry photos up!

My friends at Seed Magazine/ScienceBlogs and SeriousEats are getting ready to throw their annual Pi Day Bake-off. All you need to do is bake your pie, photograph and submit. The Grand Winner gets $314! Note from Greg @Seed: “–the cleverer, sillier, and the more creative, the better. Also: Pies delivered directly to Seed Magazine offices (12 W 21st St, 7th fl) will be given special consideration 🙂 ” (emoticon added) Don’t desert this opportunity. Dessert it. 😯 (I deserve an emoticon too)

Janet’s Art Show & Monkey Bread

@ Janet Hicks‘ art show & Gainesville party. The highlight of the night was when they made Monkey Bread using the leftover pizza dough. It’s like pieces of cinnamon bun slabbed together and easy to pull apart. All they did was cut up the dough into small strips and added butter, brown sugar and cinnamon, then bake. Sweet.

Before going to this party I saw a girl in the bodega I thought was cute. Then I saw her at the party and realized I played a card game with her the week before at a bar. When she was leaving, I said “Hi, I saw you at the bodega but didn’t recognize you. Hi…” In that moment, I’m not sure she knew who I was.

Kentucky Derby B-Day Trifle

Rebecca’s b-day trifle dessert. My first. I’m a big fan of soft foods!

Ross smoked the chicken and the pork shoulder. I was picking around the pork bone and juice tray. I got some tasty bits out of there. Then onto some of that chicken in the homemade BBQ sauce. Mine That Bird I say.

Party Prep

rusty makes his redneck chili. i use psycho-cybernetics to create a dessert recipe in my sleep –chili pumpkin pie. bottom layered with mole sauce. pumpkin pie filling with haberno sauce. it turned out pretty good. kind of like spicy hot chocolate with that heat and spice that seeps up your throat like you threw up a little, but in a tasty way.
